Made the true reinheitsgebot way. Using aciduated malted and no other weird stuff. Pitching Lacto Brevis while fermenting cold was a bad idea since it got no chance to develop any sourness before the alcohol took over. Any how, the beer fermented well even though it's below recommended spec for WLP029 and the smoked wheat malt gave a mellow smokyness to the beer. The high carbonation and crisp clean base make this a well drinkable beer.
